It seems the more we’re on the road, the tighter our clothes are fitting and the smaller the airplane seats are getting. A cupcake here, a key lime pie there. It all adds up. Traveling doesn’t have to mean eating unhealthy and truly the key is moderation not deprivation. So when at home and cooking why not cook light. One of our favorite quick & easy dinners is a simple salmon filet in fresh lemon herb butter, red parsley potatoes, and a steamed vegetable.

This time of year all the garden stores have  herb gardens in pots.  I just bought one at the farmers market that has basil, rosemary, parsley, thyme, oregano and garlic chives. They’re simple to care for just 4 hours of sun and moist soil. They really add so much to even the simplest meal.
